{"id":1575,"date":"2019-12-11T11:59:56","date_gmt":"2019-12-11T10:59:56","guid":{"rendered":"https:\/\/www.carnicasiglesias.com\/?p=1575"},"modified":"2019-12-11T11:59:56","modified_gmt":"2019-12-11T10:59:56","slug":"julio-rabos-ibericos","status":"publish","type":"post","link":"https:\/\/www.carnicasiglesias.com\/en\/recetas\/julio-rabos-ibericos\/","title":{"rendered":"JULIO \u2013 RABOS IB\u00c9RICOS"},"content":{"rendered":"<p><strong>INGREDIENTES:<\/strong><\/p>\n<ul>\n<li>6 rabos de cerdo<\/li>\n<li>4 nabos negros<\/li>\n<li>1 ajo<\/li>\n<li>1 zanahoria<\/li>\n<li>1 cebolla<\/li>\n<li>250 ml de vino tinto<\/li>\n<li>1 L de caldo de carne<\/li>\n<li>1 jengibre<\/li>\n<li>3 clavos de olor<\/li>\n<li>1 pizca de nuez moscada<\/li>\n<\/ul>\n<p><strong>MODO DE PREPARACI\u00d3N:<\/strong><\/p>\n<p>Quemar los rabos de cerdo con un soplete para eliminar los pelos. Hervirlos durante 10 minutos para quitar las impurezas.<\/p>\n<p>Pelar y cortar la cebolla, la zanahoria, el puerro y el jengibre. Dorarlos en una cazuela con aceite de oliva, ajo y los clavos. Cuando las verduras se hayan dorado, a\u00f1adir el vino tinto y dejar rehogar bien.<\/p>\n<p>A\u00f1adir los rabos a la cazuela de las verduras, cubrir con caldo el caldo de carne, un poco de agua y cocinar durante 3 horas.<\/p>\n<p>Retirar los rabos de la cazuela y cortarlos a trozos.<\/p>\n<p>Colar el caldo para evitar grumos y reducirlo en una olla. Cortar el nabo en l\u00e1minas y a\u00f1adirlas a la olla.
