{"id":2311,"date":"2020-10-27T13:13:48","date_gmt":"2020-10-27T12:13:48","guid":{"rendered":"https:\/\/www.carnicasiglesias.com\/?p=2311"},"modified":"2020-12-11T08:18:56","modified_gmt":"2020-12-11T07:18:56","slug":"enero-consentido-brioche-de-cresta-de-gallo","status":"publish","type":"post","link":"https:\/\/www.carnicasiglesias.com\/en\/recetas\/enero-consentido-brioche-de-cresta-de-gallo\/","title":{"rendered":"ENERO: CONSENTIDO \u2013 BRIOCHE DE CRESTA DE GALLO"},"content":{"rendered":"<p><strong>INGREDIENTES:<\/strong><\/p>\n<p><u>Para el caldo:<\/u><\/p>\n<ul>\n<li>5 kg de alitas de pollo<\/li>\n<li>7 kg de carcasas de pollo<\/li>\n<li>1,445 kg de cebolla<\/li>\n<li>0.2 kg de ajo morado<\/li>\n<li>200 gr aceite olive virgen<\/li>\n<li>36 L agua mineral<\/li>\n<\/ul>\n<p><u>Para el guiso de crestas:<\/u><\/p>\n<ul>\n<li>300 gr de cebolla dulce rehogada al l\u00edmite.<\/li>\n<li>600 gr de crestas<\/li>\n<li>2 ajos brunoise<\/li>\n<li>1\u20442 guindilla<\/li>\n<li>Manzanilla para desglasar<\/li>\n<li>10 gr de pulpa de pimiento choricero<\/li>\n<li>15 gr de tomate doble<\/li>\n<li>20 gr de maicena<\/li>\n<li>1,2 L de fondo de pollo<\/li>\n<li>Brandy 5 ml<\/li>\n<li>Pimienta y sal.<\/li>\n<\/ul>\n<p><u>Para las chips:<\/u><\/p>\n<ul>\n<li>0.5 kg de patata nueva Espunta o agria<\/li>\n<li>Agua<\/li>\n<li>Aceite de girasol<\/li>\n<\/ul>\n<p><strong>MODO DE PREPARACI\u00d3N:<\/strong><\/p>\n<p><u>Para el caldo:<\/u><br \/>\nRehogar las verduras en una olla durante 10 minutos<br \/>\nAsar las alitas y las carcasas al horno a 200oC 40 minutos<br \/>\nLlevar a la olla todo junto, a\u00f1adir agua<br \/>\nDejar cocer 9 horas a fuego muy suave colar por chino fino y estame\u00f1a.<br \/>\nDejar reposar 12 horas y desgrasar.<br \/>\nSe obtienen 25 L.<\/p>\n<p><u>Para el guiso de crestas:<\/u><br \/>\nPara la cebolla picar en brunoise fina mucha cebolla y disponerla en un rond\u00f3n, por cada 10 kg de cebolla 4 pimientos verdes en brunoise.<br \/>\nCubrir de aceite virgen y rehogar primero tapado y cuando se venga abajo suave moviendo todo el rato, hasta que sea 10 veces menos su tama\u00f1o.<br \/>\nColar y envasar en bolsas de 300 gr.<br \/>\nEmpezamos el guiso rehogando el ajo y la guindilla<br \/>\nA\u00f1adir la cebolla y rehogar un rato, a esto se le a\u00f1ade la cresta marcada y desglasada con manzanilla.<br \/>\nSe a\u00f1ade maicena, tomate doble , choricero, rehogar, mojar con brandy.<br \/>\nA\u00f1adir fondo caliente poco a poco removiendo y dejar guisar 1 hora y media o dos. Al principio tapado dejando que se agarre un poco, al final de la cocci\u00f3n.<br \/>\nSe pone a punto de sal, pimienta negra y brandy y deja reposar, desgrasar si hiciera falta.<\/p>\n<p><u>Para las chips:<\/u><br \/>\nCortar en cortadora l\u00e1minas de 1.5 mm, Y dejar apiladas naturalmente<br \/>\nMeter estas l\u00e1minas apiladas en agua y cambiar dos veces el agua.<br \/>\nCortar en cuadrados uniformes de 2 cm por, y dejar bajo chorro de agua 5 minutos que pierda todo el almid\u00f3n.<br \/>\nEscurrir pasar por centrifugadora, pasar por papel secante.<br \/>\nFre\u00edr de pocas en pocas a
