{"id":793,"date":"2018-12-12T12:34:48","date_gmt":"2018-12-12T11:34:48","guid":{"rendered":"http:\/\/www.carnicasiglesias.com\/?p=793"},"modified":"2018-12-12T14:31:36","modified_gmt":"2018-12-12T13:31:36","slug":"enero-cardo-jamon-almendra","status":"publish","type":"post","link":"https:\/\/www.carnicasiglesias.com\/fr\/recetas\/enero-cardo-jamon-almendra\/","title":{"rendered":"ENERO &#8211; CARDO CON JAM\u00d3N Y ALMENDRA"},"content":{"rendered":"<p><strong>INGREDIENTES:<\/strong><\/p>\n<ul>\n<li>Unas pencas de cardo (las mejores son las centrales)<\/li>\n<li>Tacos de jam\u00f3n<\/li>\n<li>Un pu\u00f1ado de almendras<\/li>\n<li>Harina<\/li>\n<li>Caldo de verdura<\/li>\n<li>2 dientes de ajo<\/li>\n<li>Aceite\/sal<\/li>\n<\/ul>\n<p><strong>MODO DE PREPARACI\u00d3N:<\/strong><\/p>\n<p>Lo primero que haremos ser\u00e1 pelar el cardo, para ello nos pondremos unos guantes de latex (deja unas manchas en los dedos muy dif\u00edciles de quitar).<\/p>\n<p>Quitaremos las hebras y telillas y partiremos en trozos de 4 cm aprox.<\/p>\n<p>Despu\u00e9s, lavaremos concienzudamente la verdura y la pondremos a cocer en olla a presi\u00f3n durante 20 minutos aprox. Es una verdura bastante dura, si cocinamos la parte central del cardo, al ser m\u00e1s tierna tardar\u00e1 algo menos. Comprobamos que est\u00e1 en su punto de cocci\u00f3n y escurrimos guardando el agua de la cocci\u00f3n para la salsa.<\/p>\n<p>Para elaborar la salsa, pondremos en una cazuela un chorrito de aceite, los dientes de ajo picados y a\u00f1adimos los taquitos de jam\u00f3n y las almendras picaditas, sofre\u00edmos un poco y a\u00f1adimos la harina, rehogamos hasta que se haya cocinado un poco y vamos a\u00f1adiendo el caldo de verduras, removemos como si se tratase de una bechamel, rectificamos el punto de sal y cuando tenemos la salsa, a\u00f1adimos los trozos de cardo y mezclamos con la salsa, dejamos cocinar un par de minutos y servimos.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>INGREDIENTES: Unas pencas de cardo (las mejores son las centrales) Tacos de jam\u00f3n Un pu\u00f1ado de almendras Harina Caldo de verdura 2 dientes de ajo Aceite\/sal MODO DE PREPARACI\u00d3N: Lo primero que haremos ser\u00e1 pelar el cardo, para ello nos pondremos unos guantes de latex (deja unas manchas en los dedos muy dif\u00edciles de quitar). &hellip;
